An idea to bring an Italian food truck featuring truffles to Maine is moving quickly down the road. Owners hope The Truffle Truck, a high-end Italian food truck, opens in Maine on May 1.
Co-owner Anthony Fratianne said Thursday the concept for the food truck started three months ago. He ordered the truck this week and the head chef has already been hired.
“We’re moving pretty quickly,” Fratianne said.
Fratianne said White Knuckle Customs in Westbrook will customize the truck. Meanwhile, chef Corrado Cassoni is training in Italy with the food truck’s partner, Urbani Truffles. A menu on the truck’s website shows most entrees cost about $15, and Fratianne says diners will have the option to add freshly shaved truffles for $10 to $15, depending on market prices.
The truck will offer delivery, takeout and catering once the operation starts this spring, Fratianne said.
